Sushi Masterclass at Cho Gao

Who doesn’t like sushi? C’mon, we all do, don’t we!? The problem with sushi is that you always have to go to a restaurant for excellent sushi or you call the delivery service as we all ain’t sushi masters and haven’t attended a sushi masterclass. Well, since last Sunday we have at least a baby-sushi master at home..

…because I (Tim) attended an exclusive Sushi Masterclass at Cho Gao in the Crowne Plaza Abu Dhabi. The restaurant is well known for its delicious Asian cuisine but also for very good quality sushi at their own sushi bar. This is also where the magic happend. I wasn’t the only attendee but had great company with fellow blogger colleagues.

Before we started ourselves the chef and sous-chef showed & explained us how to roll the perfect Mamenori Roll. We talked about the ingredients, their quality and all the little hints you need to know when preparing sushi. We all did very well ourselves then and got support by both chefs who also helped us here and there to get a perfect roll. In case you ask yourselves about the ingridients and steps, here we go:

Ingredients (for 1 roll, equals 8 pieces)

  • Mamenori Sheets (Soybean Paper)
  • 90g Sushi rice
  • Cucumber (thin slices)
  • Avocado (sliced)
  • Shrimp Tempura (2 pieces)
  • Crabstick (2 pieces)
  • Sriracha Mayo
  • Sriracha Sauce
  • Caramel Sauce

Steps

  1. Put on disposable gloves and drip a little bit of the mayo on your hands and rub it in (the rice is less sticky on your hands then).
  2. Place a Mamenori sheet on a clean & dry surface (i.e. cutting board).
  3. Take all of the rice in your hands and place it on the Mamenori sheet but leave 2 inches space at the top of the sheet.
  4. Try to spread the rice equally and be careful not to “break” the rice by pushing to hard.
  5. Next, place two avocado slices next to each other at the bottom.
  6. Above the avocado, you place two pieces of the shrimp tempura.
  7. Followed by the cucumber slices.
  8. And the two pieces of crabstick.
  9. Above the avocado, you place two pieces of the shrimp tempura.
  10. Top it with Caramel sauce and slowly and carefully begin to roll the Sushi (use your thumbs to align it and always keep your forefingers “inside” the roll while rolling. Sounds complicated but is fairly easy).
  11. That’s it, you got your first Mamenori Roll done 🙂
  12. Cut it into 8 equal slices and top it of with Sriracha mayo and Sriracha sauce on top of the mayo.
  13. ENJOY!!!

The sushi masterclass was a great experience – and of course taste – to do sushi on my own. I hope Cho Gao will offer sushi masterclasses soon to the public!

In case you never been to Cho Gao or you just want to go back, they’ve got something special for you. Their Tokyo Street Food Festival will be held from 10th – 16th December for AED 90++, all day from 12pm – 11pm.

  • Teriyaki Ebi Roll
  • Unagi Roll
  • Nato Oba Roll
  • Crispy Tempura Roll
