Today we introduce you to this ultimate power recipe: Vegan matcha protein pancakes!
They are super yummy and easy to make and the perfect breakfast after your workout.
Unfortunately my pictures are not very nice this time, as the pancakes don´t look very nice and are very green, however they taste freaking amazing! After I made them this morning, I couldn’t get enough of them and ate them all alone. hahaha!
They are super easy to make and the ingredients are available in actually every supermarket.
- 1 TBSP Agave syrup
- 1 TSP Matcha powder
- 2 Bananas
- 3 Egg whites (for non vegan) or egg white alternative (for vegans)
- 1 TBSP Almond milk
- 3 TBSP Protein powder (I used my vegan vanilla protein powder)
- 4-5 TBSP Oats
- 1 TSP Baking soda
- If you like: Some fruits and soy yoghurt for decoration
Blend the bananas, oats and the almond milk. After they are mixed, add the additional ingredients and mix it again until it looks like a nice pancake dough.
Afterwards heat the pan and use some oil so the pancake doesn’t stick in it. You can also use a tissue to spread the oil in the pan. If it’s a non-stick pan you don’t even have to use oil at all.
Now give the dough in small portions into the pan and bake each pancake for a few minutes. If you see that there are small bubbles on the top you know its time to turn it around and bake it from the other side.
For me it’s the easiest if I bake quite big pancakes with a size of a round 8-10 cm because it’s easier to turn them for me, but try it yourself and see whats the easiest for you.
Maybe you ask yourself why we are trying vegan recipes right now. Tim just got me a personal trainer as a birthday gift which I will start in September. Regarding this I also have to change my nutrition habits and will switch for a specific time frame to a vegan diet as my trainer is vegan. I am super excited about this and sure it will be an exciting experience.
