After the gym, we both are always very hungry and really want to eat something delicious but no shitty fast food or other unhealthy stuff. This is a perfect meal and so good to fill you up with energy!
We didn’t want to go for sweet potato fries again and decided to try something new. So we had a look in our fridge and we’ve put all of our leftovers together. The result is this amazing dish!
What you need?
- Sweet potatoes (depends on how many you want to eat)
- Salt (I used lavender salt)
- Red cabbage
First, you out the oven on 180 degrees Celsius and prepare the sweet potato. Wash and dry it with a tissue. After that, spread some salt and the other herbs into the casserole and site the sweet potatoes into it. Put this into the oven for around 60 minutes on 180 degrees. During this you have some time to prepare the yogurt dip.
For this, kindly mix the yogurt with parsley and salt & pepper. Afterwards cut the red cabbage into stripes. Then lump together the garlic, some apple pieces, leek and walnuts into a pan and roast it for around 10 minutes.
When the potatoes are ready cut them in the middle, sprinkle the yogurt inside and decorate with the vegetable-mix.
