Asian-style chopped salad with SESAME, ORANGE-POACHED SHRIMP and CREAMY, SPICY HONEY-CASHEW DRESSING.

DRESSING: 6 tablespoons cashew butter ), 2 tablespoons water, 1.5 teaspoons honey, 1 teaspoon apple cider vinegar, 1 teaspoon lemon juice, 1 teaspoon sriracha (or hot sauce of choice, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt (or more to taste). Whisk together until smooth. Add more water for thinner consistency. SALAD: 1 romaine heart (chopped), 1 cup baby arugula, 1 cup shredded purple cabbage, 1/2 cup shredded cabbage, 1/2 cup chopped cherry tomatoes, 2 green onions (chopped), 1/2 cup chopped clementines (or any orange), 1 avocado (sliced for topping). SHRIMP: BRING 3 cups of water, juice of 2 oranges, 3 tablespoon salt, 1/2 sliced onion, 2 cloves minced garlic and fresh herbs of choice (I used cilantro) to a boil. Add 1 pound of thawed shrimp and turn off heat. Allow to poach for about 3-4 minutes until cooked through. Remove, and place into a bowl of ice to cool for 5 minutes. Next, pat them dry and place in a bowl. Toss with a few dashes of coconut aminos or soy sauce and a small drizzle of sesame oil. Garnish with sesame seeds and scallions.
