Asiago, Mozzarella, and Parmesan Scalloped Potatoes by _mustlovegarlic_

Ingredients:
1 lb red potatoes
1/2 cup Asiago
1/2 cup mozzarella
1/2 cup parmesan
2 tbsp butter
1 tbsp minced garlic
2 tbsp flour
1 cup half & half
1/2 tsp salt
1/8 tsp pepper
1/8 tsp nutmeg

1. In a large pot, boil potatoes 15 minutes until tender but not overly done. Drain water and slice potatoes into 1/8 inch thick medallions. Set aside.
2. Grate and mix all cheeses.
3. Melt butter in pot over med-low heat. Add garlic-cook 2 minutes. Whisk in flour until smooth and light in color. Slowly whisk in cream, then add spices. Continue whisking until mixture has thickened slightly-about 2 minutes. Remove from heat, fold in 1 cup of cheese a handful at a time.
4. Preheat oven to 350. Meanwhile, grease an oven safe 9inch baking dish or cast iron with butter. Cover bottom with 1/3 of potatoes in a circular single layer. Top potatoes with half of cheese mixture. Repeat. Add last layer of potatoes and top with remaining 1/2 cup grated cheese. Bake 25-30 minutes.
